In the article "A quick (and almost free) way to make a cold smoked smokehouse" a smoking chamber from a cardboard box was presented. At the end of the article, it was promised to talk about the manufacture of a smoke generator for a smokehouse, which will be done in this article.
The basis of the smoke generator is a stainless steel mesh. First model the master was like that.
The second model was easier to manufacture.
As you can see in the photo, a grid tray is made. Jumpers are made inside the tray, but not solid, at the end there should be a transition to another compartment. Inside the tray, small sawdust from wood species suitable for smoking (oak, alder, fruit species of trees, etc.) is filled up. Sawdust should be small and dry, you can dry them in the microwave. When the sawdust is laid, they are ignited on one side, and the smoke generator is placed in the smoking chamber. Sawdust smolders and practically does not produce heat. In the first model, the smoke generator worked for about 6 hours. The master extinguished the second smoke generator after 6 hours, but according to his estimate, he could work out about 9 hours.
