I’m trying to make such a dryer (time is running out). So far, this has all stopped at this stage. The volumes of such "drying" for the average man are too big, but each has his own requests and it is possible to reduce this volume to the desired one. There are two latches in each cell, a cart on wheels, which makes it easy to move it to the right place. Why it was all so conceived (large volume), the smaller the layer you spill, the faster it will dry out and you won’t have to stir up the raw materials again. I adapted the finished metal latches, you can make them simply from wood. My wooden ones with a mesh are inserted into metal ones (which increased their rigidity). I plan to fill the trolley with trays only "loaded", which will allow us to create the necessary volume for air circulation. Air circulation can be both natural and forced.

The essence of the dryer is, firstly, to protect fruits from insects (otherwise the hordes of Drosophila swarm)))), and secondly, to remove moisture. And this should be the flow of air, "hugging" the fruit.
I would raise it higher (so that there would be an inflow of dry air from below), I would close the sides, and provide an extract from above. In my former refrigerator, I cut a round hole from above, screwed the aluminum flange from the sprinkler "collective farm" system and put on it a three-meter PVC sewer pipe, diameter 110, which was fixed with a clamp to the roof of the gazebo.(The whole structure was located right next to the gazebo in the middle of the plot. And from the bottom I made a hole for air intake. The refrigerator painted black, and when the door was closed tightly, the draft was strong, it was already humming !!! Therefore, it dried very quickly. And with natural ventilation it was saturated the air will remain around the fruit in pairs. It must be removed, because at high relative humidity the drying process (evaporation of moisture) will be slowed down, or even completely stopped. Have you noticed how, for example, in Turkey the linen does not dry in the hotel? On the +30 at night, and the socks hung on the balcony in the evening are as wet by the morning as they were! It's for the whole night at plus thirty! Because the air is already saturated with moisture by the sea, but there is no wind, the vapors are not carried away. Only in the afternoon, in the direct sun, something is able to dry there, and that’s only because the wet surface heated by direct rays has a temperature above air, respectively, and the water vapor from it is expanded stronger than that in the air ....

In your case, if it is supposed to be used indoors, it would be necessary to create somehow a vertical air flow - arrange a “cap” with a fan on top, or connect, for example, to some exhaust duct ... But the main thing is that I repeat the air flow went through fruit racks ...
As I already wrote, I did not dry out initially, just because it was easier for the air stream to bypass the grilles through the void formed in the door after dismantling its inner lining with shelves. But there was a craving! And nobody canceled Bernoulli's law - the stream had to take air with it from the cell. But did not have time - only those close to him were dry.

I did the smaller one from the refrigerator .. I lifted the pipe 3 meters from the top, and made the suction below through a long aluminum corrugation 150-ku .. I turned it into a snake and painted it black - it turned out something like a solar collector. At first I thought to embed a channel fan from above, but when I assembled, I saw that the draft in the sun was already so powerful! The case then heats up black. I loaded apples ... and they were more likely to bake than dry… ..... It didn’t dry due to the observation that the air flow was bypassing - I gutted the entire refrigerator, including the door, and made the mesh shelves in size refrigerator - as a result, the air flow went around, through an empty door. Only the cutting edge dried up, so I guessed. Redid the shelves - made them stick out forward and enter the door when closing. Opposite each, just below it, he riveted to the back wall and to the door along the tin plate and bent them. Now the shelf abuts against this plate spring, pressing it. And when you close it, air cannot pass from below upwards anywhere except through gratings. The result, as they say, exceeded all expectations! Apples dry in two days even without much sun and do not mix anything! Apricots - longer, three somewhere ... But if the sun bakes - then, in general, everything dries out with a moment ... I think, because of the greater flow rate mainly. Still, it would be necessary to embed the hood .... Yes .... a lot of what is needed ....))))))) And now there muddied the construction site. She generally disassembled and drank apricots .... There is nothing much to dry yet))))
