But in order to preserve all this good, of course, one of the means of long-term storage is preliminary cold smoking. You can also use the hot smoking method, but such a product will not be stored for a long time, since the meat or fish are heat-treated and the meat is essentially cooked, like grilling with smoke only, is not stored for long even in the refrigerator, compared to cold smoking.

The method of this smoking is that the process takes place without high temperatures, as for the hot method, and there is a process of slow drying by means of cold smoke, so to speak. These smokehouses are mainly made capital from bricks, blocks, boards. The principle of the device is as follows: the furnace with coals and wood should be located at a distance no closer than two meters to the smoking chamber - this is necessary for the smoke to cool, and for more efficient cooling the chimney pipe passes underground, where it receives an additional portion of chill from the ground . The chimney pipe comes to the bottom of the smoking chamber. The camera itself is built of brick, blocks, or wood in the form of a small house with a door and shelves from the net inside for laying meat or fish there.

The process of cold smoking is very long and lasts from several days to a couple of weeks, but the time spent is certainly worth it, very tasty products are obtained after the completion of the whole process.

The author, an avid fisherman and hunter, who always has plenty of fresh fish and game, decided to build a smoke-house of the cold smoking method on his personal plot. To build a smoke chamber, our hero chose blocks.

Materials: blocks, brick, board, timber, cement, sand, soft tiles, grate, chimney pipe.

Instruments: shovel, trowel, mallet, hacksaw, hammer.
